They are chock- full of beta-carotene, the precursor to vitamin A, which is essential for vision and a healthy immune system. Herbs, spices, and avocado make this sweet potato dish irresistible!Full post here: boxdfresh.co.uk/blog/recipes/sweet-potato-jackets-with-avocado-chilli-salsaServes: 2/ Cuisine: MexicanCooking time: 30 minutesIngredients:- 2 sweet potatoes- 1 onion, roughly chopped- 2 garlic cloves, crushed- 1 tsp. paprika- 1 can chopped tomatoes- 1 avocado, chopped- 1 red chilli, finely sliced- ¼ bunch coriander, roughly chopped- 1 can of mixed beans, drained- 1 lime, cut into wedgesYou will need:- Olive oil- Salt- Pepper- Coconut yogurt, to serve (optional)Method:1. Pierce the sweet potato skins 6 to 7 times and place on microwaveable dish for 5-8 minutes rotating throughout. To check that it is cooked ensure that the potato is soft throughout by poking a hole through with a toothpick. It should pass through to the centre with ease.2. Meanwhile, heat 1 tbsp. of oil in a frying pan and cook the onion for between 5 minutes on a low to medium heat stirring frequently.3. Add the garlic and paprika and stir for 1 minute. Add the tomatoes, then bring to a gentle simmer, season well with salt and pepper and leave for 10 minutes occasionally stirring. Add beans and cook for another 5 minutes.4. To make the salsa, combine the avocado, chilli and coriander in a small bowl. Mix well and season with juice from one lemon wedge.Halve each potato, spoon over the beans and the salsa.
